  • 4 shallots (chopped)
  • 4 cloves garlic (minced)
  • 1-inch ginger (sliced)
  • 2 lemongrass stalks (crushed)
  • 4 kaffir lime leaves
  • 1 cinnamon stick
  • 1 star anise
  • 5 cardamom pods
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 1 Tbsp tamarind pulp (or substitute with 1 Tbsp vinegar)
  • 2 cups coconut milk
  • 1/4 cup palm sugar (or substitute with brown sugar)
  • Salt to taste

  1. In a large pot, heat oil over medium heat and sauté shallots, garlic, and ginger until fragrant.
  2. Add lemongrass, kaffir lime leaves, cinnamon stick, star anise, and cardamom pods. Stir for a minute.

  4. Add beef cubes and sear until browned on all sides.
  5. Pour in coconut milk, tamarind pulp, palm sugar, and salt. Stir well.
  6. Bring to a boil, then reduce heat and simmer for 2-3 hours until the beef is tender and the sauce thickens.
  7. Adjust seasoning if needed. Serve hot with steamed rice.
