- Oyster sauce - packed with umami
- Soy sauce - to season

- Rice vinegar - for sharpness
Ingredients
- 200g of flat rice noodles
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 2 eggs
- 200g of chicken breast/thighs, sliced into thin pieces (or tofu for a vegetarian option)
- 1 cup of Chinese broccoli, chopped into bite-sized pieces
- 2 tablespoons of oyster sauce
- 2 tablespoons of soy sauce
- 1 tablespoon of fish sauce
- 1 tablespoon of sugar
- 1 tablespoon of rice vinegar
- A pinch of ground white pepper
Instructions
- Soak the rice noodles in warm water for about 20-30 minutes until they become pliable. Drain well and set aside, they shouldnt go into the hot pan soggy.
- Heat a neutral oil in a wok or large frying pan over medium-high heat. Add the garlic and stir-fry until fragrant (20sec)
- Add the chicken (or tofu) and cook until it is fully cooked through.
- Push the chicken to one side of the wok and crack the eggs into the other side. Scramble the eggs and cook until set. Remove from the wok and set to one side.
- Add a touch more oil and add the noodles, Chinese broccoli, now try to scorch them so you can see some colour .. the wok should impart a caramelised almost burnt flavour (2mins)
- Add oyster sauce, soy sauce, fish sauce, sugar, and rice vinegar. Stir well to combine all the ingredients and coat the noodles in the sauce. Continue to stir-fry for a 2 more minutes until the noodles are done and the Chinese broccoli is tender.
- Season with white pepper, give everything a final toss, and remove from heat.
- Serve hot with a side of chili paste or sambal oelek if you like it spicy.
