  • Shoyu (soy sauce): salty depth and umami
  • Chicken stock powder: depth of flavour
  • Sake: a subtle sweetness
  • Mirin: a delicate flavour

Ingredients

For the broth:

  • 4 cups water
  • 2 tablespoons shoyu (soy sauce)
  • 1 tablespoon chicken stock powder
  • 1 tablespoon sake
  • 1 tablespoon mirin

For the toppings:

  • 200g ramen noodles
  • 2 soft-boiled eggs
  • 100g sliced pork or chicken (cooked or raw)
  • 2 sheets nori (seaweed), cut into small pieces
  • 2 green onions, thinly sliced
  • Optional: corn kernels, bean sprouts, bok choy, or any other desired toppings

Instructions

Instructions:

  1. In a large pot, bring water to a boil over high heat.
  2. Add shoyu, chicken stock powder, sake, and mirin to the pot. Stir well to combine and let it simmer for 5 minutes to infuse the flavors.
  3. Meanwhile, cook the ramen noodles according to the package instructions. Drain and set aside.
  4. If using raw pork or chicken, thinly slice it and cook it in a separate pan until fully cooked.
  5. To assemble the ramen bowls, divide the cooked noodles between two serving bowls. Pour the hot broth over the noodles.
  6. Arrange the cooked meat slices, soft-boiled eggs (halved), nori pieces, sliced green onions, and any additional toppings on top of the noodles.
  7. Serve the ramen immediately, allowing the toppings to mingle with the hot broth.

Cooking Tips:

  • To make soft-boiled eggs, bring a pot of water to a boil and carefully lower the eggs into the boiling water. Cook for 6 minutes, then transfer them to an ice bath to stop the cooking process.
  • Customize your ramen by adding your favorite toppings like corn kernels, bean sprouts, bok choy, or even sautéed mushrooms.
  • For added richness, add a drizzle of sesame oil or a dollop of chili paste to your ramen bowl.
