  • 200g chicken breast or thigh, diced
  • 2 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 red chili, finely sliced (adjust for spice level)
  • 2 eggs
  • 2 tbsp soy sauce
  • 1 tbsp kecap manis
  • 2 tbsp vegetable oil
  • 1 spring onion, chopped (for garnish)
  • Fried shallots (optional, for garnish)
  • Fried egg (optional, for serving)
  • Instructions

    1. Heat oil in a wok or large skillet over medium-high heat. Add minced garlic, shallots, and chili, stir-frying for 30 seconds until fragrant.
    2. Add the diced chicken and cook until golden brown and fully cooked.
    3. Push the chicken to the side of the pan and crack in the eggs. Scramble lightly, then mix them into the chicken.
    4. Add the cooked rice and toss everything together.
    5. Drizzle in soy sauce and kecap manis, stirring well to coat the rice evenly. Stir-fry for another 2-3 minutes until everything is well combined and slightly caramelized.
    6. Serve hot, topped with a crispy fried egg and garnished with spring onions and fried shallots if desired.
