Ingredients
For the noodles:
- Lingpi noodles (or the widest rice noodles you can find)
For the sauce:
- 1 tablespoons light soy sauce
- 1 tablespoon black vinegar
- 0.5 tablespoon sesame oil
- 1 tablespoon sesame paste (tahini will do)
- 0.5 cup of good quality chicken stock
- 0.5 teaspoon MSG (optional)
- 0.5 tablespoon chili oil (optional, for spice lovers)
- 2 cloves garlic, minced
- 1 tablespoon finely chopped scallions
- 1 tablespoon toasted white sesame seeds
- Dehydrated Gluten chunks (or fried tofu)

- In a separate mixing bowl, whisk together the sauces: soy sauce, black vinegar, sesame oil, paste, stock and MSG (if using) to make the sauce. Adjust the seasoning according to your taste preferences.
- Place the cooled noodles in a serving dish and pour the sauce over them.
- Add minced garlic and chopped scallions. Toss the noodles gently until they are well-coated with the sauce.
- Drizzle chili oil over the noodles for an extra kick of spice (optional).
- Garnish with toasted white sesame seeds and fresh finely sliced cucumber matchsticks.
