Ingredients

For the noodles:

  1. Lingpi noodles (or the widest rice noodles you can find)

For the sauce:

  1. 1 tablespoons light soy sauce
  2. 1 tablespoon black vinegar
  3. 0.5 tablespoon sesame oil
  4. 1 tablespoon sesame paste (tahini will do)
  5. 0.5 cup of good quality chicken stock
  6. 0.5 teaspoon MSG (optional)
  7. 0.5 tablespoon chili oil (optional, for spice lovers)
  8. 2 cloves garlic, minced
  9. 1 tablespoon finely chopped scallions
  10. 1 tablespoon toasted white sesame seeds
  11. Dehydrated Gluten chunks (or fried tofu)
  12. Fresh cucumber, for garnish

Instructions

  1. Boil your noodles and allow to cool. Mix in some sesame oil to stop if from sticking and impart flavour.
  2. In a separate mixing bowl, whisk together the sauces: soy sauce, black vinegar, sesame oil, paste, stock and MSG (if using) to make the sauce. Adjust the seasoning according to your taste preferences.
  3. Place the cooled noodles in a serving dish and pour the sauce over them.
  4. Add minced garlic and chopped scallions. Toss the noodles gently until they are well-coated with the sauce.
  5. Drizzle chili oil over the noodles for an extra kick of spice (optional).
  6. Garnish with toasted white sesame seeds and fresh finely sliced cucumber matchsticks.
  7. Serve the Liangpi immediately and enjoy the refreshing flavors and chewy texture!
